2 1/2 Cups all purpose flour
2 TBSP sugar
1 TBSP baking powder
1/4 tsp salt
1/3 Cup Butter
2 eggs beaten
3/4 Cup whipping cream (or buttermilk, or milk)(Sometimes during the fall I will add just a sprinkle of cinnamon or nutmeg to this mixture!)
In a large bowl combine all dry ingredients. Using a pastry blender or a fork, (the only power tools needed.) blend butter into mixture till it looks like dry crumbs. Make a well in the center of the flour mixture and add beaten egg and milk. Stir just until moistened.
If you mix scones or biscuits too much they become tough!
Now you can pat them out like biscuites and use a biscuit cutter, or if you are stretched for time you can take a large spoonful and drop them on a cookie sheet. About 12 on a cookie sheet.
Bake for 12-14 minutes till lightly brown on top. Serve warm
with honey, jam or apple butter. Yum!
